Swedish Shortbread Cookies

Ingredients:

Ready-made plain dough; 1 tsp of de-corticated cardamom (Take out the seeds from the husk and crush them); ¼ tsp salt; ½ cup unsalted butter; ¼ cup + 1 tbsp of confectioners’ sugar

Recipe:

· Add cardamom powder to the dough and shape the dough in a 7-inch-long log on a piece of parchment paper. Refrigerate it for up to 6 hours.

· Preheat oven to 340°F and line in a baking tray with parchment paper. Take out the dough log from the refrigerator and cut it into ¼ inch slices.

· Place them on the baking tray evenly and bake for 18 to 24 minutes until golden around the edges.

Saffron Cardamom Almond Milk

Ingredients:

· 2 cups of milk · A pinch of saffron · ½ tsp Pride of India Natural Green Cardamom, de-corticated · 1 tbsp of sugar · 4 to 5 almonds, chopped

Recipe:

· Take milk in a pan. Once it starts to boil, lower the heat and bring it to simmer.

· Add chopped almonds, cardamom powder, saffron and sugar. Increase the flame and stir for 2 minutes.

Switch off the flame and transfer it into two glasses. Garnish with sliced almond and saffron (optional).

Pear and Cardamom Baked Oatmeal

Ingredients:

1 cup rolled oats; 1 ¾ cup of almond vanilla milk or almond milk; A pinch of salt; 2 small pears; ¼ tsp of the cinnamon ground by Pride of India; ¼ tsp of de-corticated natural green cardamom pods by Pride of India

Recipe:

· Mix all the ingredients together in a bowl and pour them on a baking tray. Preheat oven at 300 degrees F. Bake it for 5 to 6 minutes and enjoy delicious breakfast within minutes.
