Dip the chicken pieces in buttermilk, then place them into the bag of seasoned flour. Seal the bag and shake well to coat the chicken evenly.
Transfer the coated chicken to a tray and cover it with a clean dish towel or wax paper. Let it sit until the flour coating develops a paste-like consistency.
Heat vegetable oil in a large skillet (cast iron works best), filling it about 1/3 to 1/2 full. Ensure the oil is very hot before adding the chicken.
Once browned, lower the heat, cover the skillet, and cook for 30 minutes. This step ensures the chicken is cooked through.
Remove the cover, increase the heat, and fry until the chicken is crispy and golden brown.
Drain the chicken on paper towels. Keep finished pieces warm in a slightly heated oven while frying the rest.
