Vegan Smiley Coconut Macaroon Recipe

Ingredients

  • 1 cup shredded coconut
  • 1/2 cup Pride of India Coconut Flour
  • 1/2 cup Pride of India Three Color Quinoa (cooked & cooled)
  • 1/2 cup coconut cream
  • 1/4 cup Pride of India Coconut Sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of Pride of India Himalayan Pink Salt
  • Vegan chocolate chips or mini chocolate chips for smiley face decorations (optional)
  • Edible markers or icing for drawing emojis

Instructions

  • Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, combine the shredded coconut, coconut flour, cooked quinoa, coconut cream, coconut sugar, vanilla extract, and pink salt. Mix well until all the ingredients are thoroughly combined.
  • Take small portions of the mixture and shape them into round macaroons using your hands. Place them on the prepared baking sheet, leaving some space between each macaroon.
  • Bake the macaroon cookies in the preheated oven for about 15-20 minutes or until they turn golden brown on the edges.
  • Once the macaroons are baked, remove them from the oven and let them cool completely on the baking sheet.
  • Once the macaroons are cooled, you can decorate them with emojis. Use edible markers or icing to draw your favorite emojis on the macaroons. Get creative and make each macaroon a different emoji!
  • If desired, melt some vegan chocolate chips or chocolate chip cookies and drizzle it over the macaroons for added flavor and decoration.
