· Pour 1 tsp of olive oil into a non-stick pan on medium heat.
· Whisk eggs with coconut milk, minced turmeric by Pride of India, and chopped avocados.
· Season well with salt and pepper.
· Add to the pan and stir for 5 to 6 minutes till you have the desired consistency.
· Serve the scrambled eggs with slices of sourdough.
