We bring you this recipe made from the goodness of Pride of India’s Organic Red Royal Quinoa, Cranberry and Butternut to make your Christmas Day all things wholesome!
3 cups butternut squash,
1 Tbsp. olive oil
1 cup uncookedPride of India’s Organic Red Royal Quinoa
1 1/2 cups water
1/3 cup dried cranberries
1/3 cup finely chopped red onion
3 Tbsp. toasted pumpkin seeds
Pride of India’s Himalayan Pink Saltand freshPride of India’s Organic Black Pepper.
Preheat the oven to 400°F.
Toss the butternut squash with olive oil and add salt and pepper to taste.
Spread the squash on a baking sheet and roast for 20-25 mins.
Rinse quinoa and place it in a pan and bring to boil and cook partially.
Combine the cooked quinoa, roasted squash, cranberries, red onions and toasted pumpkin seeds in a large bowl.
Refrigerate for two hours and serve.
